Each Kanetsugu Saiun knife boasts a Damascus blade, featuring a VG10 steel core with 1% carbon content—a highly esteemed alloy in the cutlery realm. This steel's impressive hardness ensures exceptional cutting prowess and long-lasting sharpness. The core is then encased in 32 layers of a softer steel than VG10, resulting in a blade of 65 layers (32 surrounding the core), visibly represented by the blade's wavy patterns. The handles are crafted from micarta, a humidity and temperature-resistant material, ensuring kitchen safety.
